Pistachio Cream Mini-Tarts
Great for Potlucks! The color of these is great for Christmas. The size is just right for buffet finger foods.

(1-ounce) package fat-free, sugar-free instant pistachio pudding mix

(1.3-ounce) envelope Dream Whip (there are 4 envelopes per box)
1 cup cold water 1/2 cup fat-free, low-carb milk
2 plus 2 tablespoons finely chopped pecans 2 (2.1-ounce) boxes mini phyllo (filo) dough shells (15 shells per box)

With an electric mixer in a deep medium-sized mixing bowl, combine the pudding mix, Dream Whip, water, and milk on low speed for 1 minute and then for 4 minutes on high speed, scraping the bowl often.
Stir 2 tablespoons chopped pecans into the cream mixture.
Spoon 1 tablespoon of the cream mixture into each mini phyllo shell. Top very lightly with the remaining 2 tablespoons pecans, dividing them evenly among the tarts.
Place on a pretty pedestal cake plate for added height in your buffet.
Yield: 15 (2-tart) servings.
