Portobello Garlic  Mushrooms
I like to serve these as a finger food for dinner parties.  These are great to serve while waiting for all your guests to arrive.

ounces Portobello mushrooms, cleaned and sliced 1/4 to 1/3 inch thick

 

Butter spray (I use I Can't Believe It's Not Butter)
      Garlic Salt

Heat a grill to medium heat.
Spray the grill with nonfat cooking spray.
Spray both sides of the sliced mushrooms with the butter spray.
Arrange the mushrooms on the hot grill and cook them until the bottoms are nicely browned.
Turn the mushroom slices over and sprinkle very lightly with the garlic salt.
Continue cooking them until they're tender.
Cut each mushroom slice into quarters and serve with toothpicks.
Yield: 8 servings (about half of a large Portobello mushroom)

Menu idea: These can also be served on the side with grilled steak. Actually the taste of these are so fabulous I sometimes would prefer to eat these instead of steak, which says a lot about how wonderful they are because I love a great grilled steak.
Cool & Creamy Spicy Tortilla Dip
I created this recipe especially for Oprah as a gift when I was fortunate enough to be in her studio audience.

ounces fat-free sour cream

 

Tabasco sauce (optional)
1 (16-ounce) jar chunky salsa    

Combine the sour cream, salsa, and Tabasco sauce, if using, together in a bowl; mix well.
Refrigerate for at least 1 hour before serving to let the flavors blend.
Yield: 30 (2-tablespoon) servings
