Christmas Tree Cinnamon Rolls
This is a creative way to serve an old time favorite.  It's as pretty as it is yummy.


cup sugar


cup vanilla frosting
2 teaspoons ground cinnamon   Green colored sugar (optional)
2 (10-ounce) cans pizza dough 11 maraschino cherries, halved (optional)


tablespoons fat-free margarine    

Preheat the oven 350 degrees.
Spray a cookie sheet with nonfat cooking spray.
Mix the sugar and cinnamon in a small bowl.
Roll each can of pizza dough to 11 x 17 inches.
Spread 1 tablespoon of margarine over each rectangle of dough.
Sprinkle the sugar and cinnamon mixture on top of the margarine.
Roll up each rectangle of dough like a jelly roll, starting with a long side and sealing the edges.
Cut each roll into 11 slices (for a total of 22 slices).
Arrange the slices on a baking sheet to form a Christmas tree or wreath.
Bake them for 18 to 20 minutes or until golden brown.
Invert the Christmas tree or wreath onto a large plate.
Microwave the vanilla frosting until warm and drizzle it over the top of the rolls.
Sprinkle lightly with green colored sugar, if desired.
Decorate with the cherry halves, if using.
Yield: 11 servings (2 rolls per serving)

Cookies & Cream Brownies
These brownies are super rich! A little serving goes a long way. 


(19.9-ounce) box fudge brownie mix


reduced-fat chocolate sandwich cookies, crushed
3 plus 2 egg whites 1 (8-ounce) package fat-free cream cheese, softened
3 tablespoons applesauce 1/4 cup sugar
3 tablespoons water    

Preheat the oven to 350 degrees.
Spray a 10 x 15-inch jelly roll pan with nonfat cooking spray.
Combine the brownie mix, 2 egg whites, applesauce, and water in a medium bowl; mix well.
Stir three-fourths of the crushed cookies into the brownie mixture.
Spread the mixture into the prepared pan. The batter will be the consistency of a thick frosting.
Combine the remaining 3 egg whites, cream cheese, and sugar in a mixing bowl and beat until smooth.
Spoon the cream cheese mixture over the batter.
Cut though the batter with a knife to swirl.
Sprinkle the batter with the remaining crushed cookies.
Bake for 20 minutes or until a toothpick inserted in the center comes out clean.
