Festive Cranberry Pineapple Salad
This is one of my all-time favorite Christmas salads.  I grew up loving this one as a child.  Mom used to make it high in fat.  I love it low-fat, and it is every bit as good.

ounces fresh cranberries

(8-ounce) carton fat-free whipped topping, thawed
1 (20-ounce) can crushed pineapple, drained 1/2 cup Splenda granular (or 1/2 cup sugar)
cups miniature marshmallows 1/4 cup chopped walnuts (optional)

Process the cranberries in a food processor for 1 minute.
Pour the purée into a large bowl.
Stir in the pineapple, marshmallows, whipped topping, Splenda, and walnuts.
Chill in the refrigerator for at least 6 hours. the longer it chills the better it tastes.
Yield: 14 (1/2-cup) servings

Sweet & Sour Bacon Salad Dressing
Who'd ever think that a bacon salad dressing could be low in fat? It's hard to believe but here it is.  If you like sweet and sour, you're gonna love this.

cup fat-free sour cream

1/4

cup skim milk
1/2 cup Splenda Granular 1/2 (3-ounce) jar real bacon bits
1/4 cup apple cider vinegar    

Whisk the sour cream, Splenda, vinegar, milk, and bacon bits together in a bowl until well blended.
Keep chilled until ready to serve.
Yield: 12 (2-tablespoon) servings
