Mashed Potatoes Deluxe
These are the perfect substitute for those of you who like the traditional, high-fat twice baked potatoes. 


pounds red-skin potatoes with skins on, washed and pierced with a fork


cup fat-free butter spread
1 (8-ounce) package fat-free cream cheese 1-1/4 to 1-1/2 cups skim milk
    3 teaspoons garlic salt, optional

Microwave the potatoes in a carousel* microwave for 12 minutes or until fully cooked.
Using a fork and sharp knife, cut the cooked potatoes into cubes, leaving skins on.
Put the potatoes, cream cheese, butter spread, skim milk, and garlic salt, if using, into a medium-size mixing bowl. With the mixer beat on medium speed for approximately 2 minutes or until desired creamy consistency.
Cook the entire bowl of Mashed Potatoes Deluxe in the microwave an additional 1 to 2 minutes to reheat before serving.
Serve additional butter spread on the side if desired.
* Note: If you do not have a carousel microwave, turn potatoes a quarter turn every 3 minutes.

"B.B.B" (Best Baked Beans)
My daughters loved these so much that they named the recipe themselves. They are very filling, satisfying, and delicious. No one would ever believe they're fat-free. Eat as a meal or side dish. A fun way to serve these when they're the entrée is with a pie pan as the plate.


pound package ground meatless (I use Morningstar Farms.) or 1 pound cooked ground eye of round


(16-ounce) cans vegetarian baked beans fat-free
1 (15-ounce) can butter beans, drained 3/4 cup thick-and-spicy, brown-sugar-flavored barbecue sauce
    1/2 cup chopped onion, fresh or chopped frozen onions


Spray a large microwavable bowl with nonfat cooking spray.
In the bowl combine the ground meatless, butter beans, baked beans, barbecue sauce, and onions until well mixed.
Cover and cook on high for 5 minutes.
Slow Cooker:
Spray a slow cooker with nonfat cooking spray.
In the cooker combine the ground meatless, butter beans, baked beans, barbecue sauce, and onions until well mixed.
Cover and cook on low for 4 hours.
*Note: With the meat substitute this is wonderful. For those of you who don't like vegetarian meat substitute, it's good with beef, too.
