Cottage Cheese Bread
I love using my slow cooker for wonderful breads like this. It is so convenient.
1 cup fat-free cottage cheese 3/4 cup skim milk
4 ounces Egg Beaters (or 4 egg whites) 1 teaspoon vanilla

cups reduced-fat baking mix
    1/2 cup raisins or dried cranberries

Preheat a slow cooker on high while you prepare the recipe (at least 10 minutes).
Spray the slow cooker with nonfat cooking spray.
In a bowl mix together the cottage cheese, Egg Beaters, sugar, milk, vanilla, baking mix, and cranberries.
Pour the mixture in the slow cooker, cover, and cook on high for 2 hours.
Yield: 8 servings

Menu idea: You can decorate the top of the bread with chopped cherries and sprinkle with sugar before cooking if desired..
Sweet Corn Bread
Who would ever think corn bread that tastes this good could be cooked in a slow cooker?

cup Egg Beaters

teaspoon salt, optional
1 cup evaporated skim milk 1-1/4 cup reduced-fat baking mix (I use Bisquick.)
1/2 cup brown sugar 3/4 cup cornmeal
2 teaspoons dry butter substitute (I use Molly McButter.)    

Spray a slow cooker with nonfat cooking spray and preheat for 10 minutes.
In a large bowl combine the Egg Beaters, milk, and sugar.
Add the butter substitute and salt, if using. Mix thoroughly.
Add the baking mix and cornmeal and stir until well mixed.
Pour the mixture into the slow cooker.
Cover and cook for 1 hour on high. (Do not cook on low.)
Yield: 9 servings
